This salad features lovely little California mandarins and, sadly, the very last orange from our orange tree. It’s the perfect salad for what you want something a little sweet.
Ingredients
1/2 cup almond ricotta
1 1/2 baby greens (I am using spring mix)
1 carrot, peeled and sliced
1 small cucumber, peeled and sliced
1/4 sliced red onion
1/4 cup golden raisins, soaked overnight
juice of 1-2 oranges
1 tablespoon coconut butter or tahini
1 teaspoon rice vinegar
Method
- Make the dressing by blending together the coconut butter, orange juice, raisins and rice vinegar on high speed for 2 or 3 cycles until the dressing is smooth.
- To plate, arrange the greens, carrot, onion, and cucumber and ricotta, and drizzle with the dressing.
